After finishing the game, I was curious enough to learn how many easter eggs I missed. So I found this video and I'm quite shocked at all the things I did miss.
I did find all of the Jak and Daxter references, but I was personally disappointed because they were all in plain sight. I find the Uncharted 13 movie in the newspaper amusing, though I would hope no such casting decision would be made for Nathan Drake. I did catch the two Walking Dead references, both the "Don't open, infected inside" sign and the house in the suburbs that looked suspiciously like Clementine's house in the Telltale game. The Irish Pub was an obvious Uncharted 3 reference. What did you guys catch? Did you find anything that the video doesn't cover?

I about flipped when I caught this during my Survivor+ run of the game. At the ranch house in Chapter 7, you'll reunite with Ellie in a cutscene. Once that cutscene ends, you're thrown into an encounter with a group of Hunters. BUT if you turn around (which most people don't do given the Hunter situation), you'll find a poster of a kid playing a guitar who somewhat resembles Justin Bieber. However the name displayed next to him is "Michael Scott". That's a reference to a character portrayed by Steve Carell on The Office. Considering the fact that this wasn't in the video I shared in the OP, I thought that I discovered an easter egg that no one else found.
Also, I think the ficticious album title ("Catch You Later") is a reference to this:
